  1. 1 muslo de pollo troceado para guisar*
  2. (*o podemos usar carcasas de pollo y unos filetes de pechuga)
  3. 4 tomates de la pera o en rama
  4. 120 g tortas ceceñas
  5. 1/2 cebolla
  6. 1 cucharadita pimentón dulce en polvo
  7. 2 ramas pebrella (o tomillo)
  8. 2 hojas laurel
  9. 1 pastilla caldo de carne
  10. 1 chorrito aceite
  11. Opcional: Ajo

  1. Ponemos un litro de agua a hervir con una pastilla de caldo de carne (no usaremos sal puesto que esta ya la tiene), dos ramas (o una buena pizca) de pebrella y dos hojas de laurel y tapamos el cazo o la olla.
  2. Una vez hierva, añadimos la carne de pollo y dejamos cocer durante unos 30/45 minutos.
  3. Mientras se hierve el caldo rallamos los tomates, picamos la cebolla y lo guardamos tapado con film de cocina en la nevera.
  4. Pasados los 30/45 min reservamos el caldo aparte (lo podemos colar), desmenuzamos la carne del pollo y la reservamos.
  5. En una sartén o paellera a fuego medio-alto, agregamos un buen chorro de aceite de oliva y, una vez caliente, agregamos la cebolla (podemos usar ajo en su lugar o ambas cosas), una pizca generosa de peminton dulce y sofreímos.
  6. Una vez sofrita, agregamos el tomate rallado y removemos mientras se va sofriéndo.
  7. Una vez sofrito el tomate, añadimos la carne y dejamos sofreír un poco más.
  8. A continuación, agregamos unos 250/300 ml del caldo y esperamos a que hierva.
  9. Una vez hirviendo, añadimos las tortas ceceñas y dejamos que hiervan durante 10 minutos removiendo cada cierto tiempo.
  10. Pasados los 10 min. habrán absorbido prácticamente todo el caldo, los apartamos del fuego y los dejamos reposar 5 minutos y los servimos.
  11. Variación: Podemos hacerlo todo directamente en la misma paellera. Sofreímos la carne en primer lugar, luego la cebolla (y/o el ajo) y el tomate. Añadimos un litro de agua, laurel y pebrella y dejamos que hierva el tiempo suficiente. Añadimos las tortas y esperamos 10 min. removiendo cada poco. Dejamos reposar 5 minutos. y servimos.
